Easy Cupcake Brownies

Today I posted some summer cupcakes on my Instagram page.  These cupcakes were made for a group cupcake collaboration.  But let me tell you a secret, they’re actually not cupcakes.  They’re cupcake brownies!  Sometimes, I like to switch things up a bit.  My family gets to test out all my cake recipes, and while they never complain (Is there such a thing as too much cake?!) I wanted to make something a little different for us.  These brownies are the best.  Seriously!  They are super easy to make and oh so chocolaty.  They have the perfect fudgey-ness without being too gooey.  They also have a nice bite on the edges, if brownie edges are your thing.

What I really love about brownies though, is how you can dress them up (obviously I always find a good excuse to do this).  Not only can you add in chocolate chips or walnuts, you can add in candies or different morsel flavors.  One of my favorite add-ins is always walnuts.  BUT I also really love peanut butter morsels too!  

Topping your brownies with buttercream and sprinkles is another fun way to dress up your brownies, and the options for this are endless. These summer themed cupcakes are topped with yellow buttercream, followed by pink buttercream swirls. For these easy cupcake brownies, I baked them in cupcake liners and they came out perfectly and the texture didn’t change at all!  I also like to use a scoop when adding batter to cupcake liners.  Keep in mind, this recipe makes 6 cupcakes, which for my family, is absolutely the perfect amount. Easy Cupcake Brownie Recipe

Easy Fudge Brownie Cupcakes

Makes: 6 Cupcakes

Ingredients

  • 1/2 C Unsalted Butter, Melted
  • 1 C White Sugar
  • 2 Eggs
  • 1 1/4 teaspoon Vanilla Extract
  • 1/3 C Unsweetened Cocoa Powder
  • 1/2 C All-Purpose Flour
  • 1/4 teaspoon Salt
  • 1/4 teaspoon baking powder

Instructions

  • Preheat the oven to 350 degrees F. Line your cupcake pan with cupcake liners.
  • In a large bowl, combine melted butter and sugar. Stir gently and add in eggs and vanilla.
  • Beat mixture by hand with a wooden spoon, and add in cocoa, flour, salt and baking powder. Stir mixture lightly until well combined.
  • Using a scoop, fill your cupcake liners 3/4 way (almost to the top).
  • Bake for 30 minutes, allow to cool in plan for 5 minutes and then remove to a cooling rack.
